ENDIVES WITH CREAM CHEESE AND SALMON BITS 
Ingredients:
2 whole endives,
Cream cheese,
Smoked salmon,
Directions:
Cut the ends off the endives and wash well. Separate the leaves and air dry.
Spread a teaspoon of cream cheese on the wider end of the endive. Add tiny diced smoked salmon on top of the cream cheese.
Arrange each leaf on a round platter so that you have two to three circles. This makes a delicious and light
hors d'oeuvre. Other versions: Endive with cream cheese and chopped olives Endive with humous and one spearmint leaf.
